What is it? Fluffy ladyfingers soaked in a freshly pulled espresso, layered between a lightened mascarpone filling and cocoa powder.

In this class, we'll learn the ins and outs of this dreamy Italian classic! We'll make everything entirely from scratch, starting with the ladyfingers. We'll look into the science behind their fluffy texture, and see if making them from scratch makes a difference. We'll craft the ultra-fluffy mascarpone filling and look at a few tips for having a homogenous mixture. Lastly, we'll assemble the show-stopper with fresh espresso & cocoa and see a few tips for a picture-perfect slice every time!
